Pasta with Cheese and Aubergine Sauce(serves 4)

Ingredients
225 gms pasta of choice (fettuccine, rigatoni, macaroni)
1 aubergine (eggplant) chopped finely
half bottle of Provisto Sugo (Italian tomato sauce)
100gms ricotta cheese
1 small onion finely chopped
1 teaspoon fresh oregano
1 clove garlic, crushed
1 teaspoon fresh basil

Instructions
Dry fry onion and garlic in a non stick pan, add tomato sauce and oregano and simmer for twenty minutes. Add aubergine, basil and cheese and heat through. Season with black pepper and serve over pasta.
